Piñasca and The Fong
Piñasca
Ingredients:
2 oz Sagatiba Cachaça
2 Slices of Grilled Pineapple*
1 oz Fresh Squeezed Lime Juice
½ oz 1:1 Simple Syrup
Sweet & Spicy Rim**
Glass: Old Fashion
Ice: Crushed
Garnish: Lime Wheel
Method:
Muddle, Shake and Strain
*Cut fresh pineapple, slice lengthwise and grill until the simple sugars are caramelized with beautiful grill marks.
** 1T sugar, 1/8 t salt, 1/8 t cayenne pepper
History/Rational:
My inspiration was drawn from Latin culture where fresh picked fruit is dipped into salt and dried chili peppers. I chose to incorporate this fantastic combination into another Latin favorite the Caipirinha, where fresh lime juice and cachaca are accentuated with caramelized flavor of grilled pineapple.
The Fong
Ingredients:
2 oz Beefeater
½ oz Lillet
½ Garam Masala Grilled Lemon
¾ oz Honey Cardamom Syrup
Glass: Martini
Garnish: Grilled Lemon Zest
Method: Squeeze Lemon and add addition ingredients, shake, double strain up
History/Rational:
Created for Nathan Fongs 50th birthday this food friendly cocktail pairs gin with the caramelized flavors of the grilled lemon, and the spice of garam masala with honey and cardamom.
